Chewy Chocolate Chip Cookie Bars are absolutely delicious. These cookie bars have the perfect balance of soft chewy edges and a slightly gooey center. Cookie bars are a great sweet treat that comes together fast. They are essentially one giant chocolate chip cookie.
I love to add nuts to my chocolate chip cookies, so I decided to add some to these cookie bars. Adding nuts to them adds texture and great flavor. More than likely you already have all of the ingredients to make these cookie bars. Which is what I love about them. I can whip up a quick treat and not have to bother with a grocery trip.
I added dark corn syrup to this recipe to add a little extra chewiness to the bars. It also adds some richness to the overall flavor. I thought of my favorite chocolate chip cookie recipe and how it has corn syrup for the chewy texture. The rich flavor of the corn syrup paired with the buttery flavor of these cookie bars is lovely. If you do not have corn syrup, you can omit it. The bars will still turn out great.
You can substitute any nut for the pecans in this recipe. Or leave them out if you want. You can even add in other flavored chips, or candies like m&ms. Cookie bars are easily customizable.
Tips for making Chocolate Chip Cookie Bars
- When creaming the butter and sugar, make sure to fully cream the butter. Allow it to lighten in color an become fluffy. This will greatly improve the texture of your cookie bars.
- I like to add the chocolate chips in with the flour instead of mixing them in afterwards. I find this helps to prevent overmixing the dough. Which can cause your cookie bars to have a tougher texture.
- Make sure you line and grease your baking dish. This ensures that nothing sticks to the pan.
- For extra gooeyness, slightly under bake the cookie bars.

Preheat your oven to 350°F. Grease and line a 9"x13" baking dish.
In a mixing bowl cream together the butter and sugar until the butter is lighter in color and fluffy. About 6 minutes.
Add in the eggs, one at a time, making sure each egg is fully incorporated. Add in the corn syrup, making sure to scrap down the sides of the bowl as needed.
Next mix in the vanilla, baking powder, baking soda, and salt. Mix well.
In a separate bowl, mix together the flour, pecans and chocolate chips. Carefully add to the butter mixture. Mix just until the flour is fully incorporated.
Spread into the prepared baking dish and bake for 30-35 minutes. The middle will still be a little gooey, but it will continue to cook after it has been pulled out of the oven. Allow to cool 45 minutes before cutting. Enjoy!
