These Berry Breakfast Bars are out of this world! The wonderful berry flavor from all of the mixed berries is so refreshing. This breakfast bar recipe uses old fashioned oats and a very little amount of sugar. Making them a healthier breakfast option. I love making quick and easy breakfast dishes that are full of nutrient packed ingredients like berries and oats.
These Berry Breakfast Bars are one of my favorite quick and easy breakfast recipes. Besides their wonderful flavor, what I love about these bars is how easy it is to customize them. I like to use whatever berries I have on hand. Fresh or frozen work just fine for this recipe. Apples, peaches and pears can also be used. Spices like cinnamon and ginger can be added to the oat crumble. Ground nuts can also be added to the crumble. They are so easy to customize!
Speaking of nuts, this dish can be made with many different nuts like, pecans, walnuts or hazelnuts. Or the nuts can be left out for nut free Berry Breakfast Bars. There are so many options, it is fun being able to customize this recipe with ingredients I need to use or want to experiment with.
For an even healthier option the butter can be replaced with melted coconut oil. Gluten free flour can also replace the all-purpose flour in this recipe. Like I said, this recipe is easily customizable to fit your needs. It is a great recipe to have in your repertoire. I guess I might add that the recipe is wonderful as is!

Ingredients Needed to Make Berry Breakfast Bars
Old Fashioned Oats
All-purpose Flour- Gluten free flour can be used in place of the all-purpose flour.
Butter- Melted Coconut oil can be used for a healthier option.
Light Brown Sugar
Granulated Sugar
Salt
Berries– Fresh or frozen can be used.
Corn Starch
Lemon Juice
Vanilla Extract
Sliced Almonds (optional)
Heavy Cream– Milk can be used in place of the heavy cream.
Powdered Sugar
How to Make Berry Breakfast Bars
- Make the crumble– Combine the melted butter with the oats, vanilla extract, brown sugar, salt and flour. Mix until well combined. Reserve 1/2 cup of this mixture.
- Press the crumble into the pan– Line an 8×8 square baking dish with parchment paper and press the remaining crumble evenly into the pan.
- Sprinkle on 1/2 of the fruit– If using strawberries, cut into smaller pieces. I like to quarter the strawberries.
- Add cornstarch– Sprinkle the cornstarch all over all of the fruit.
- Add 1/2 the sugar– Sprinkle 1/2 of the granulated sugar all over the fruit.
- Add the lemon juice– Sprinkle the lemon juice all over the fruit.
- Sprinkle over the fruit– Add the remaining fruit and sugar.
- Add the topping– Sprinkle over the reserved crumble, gently squeeze some of the crumble together as you are putting it on top of the fruit to make larger crumbles.
- Bake– Bake in a 375° F for 30 minutes, remove from the oven and top with sliced almonds (optional) continue baking for 10 more minutes. Cool completely before icing.
- Make the icing– While the bars cool make the icing. Combine the powdered sugar and heavy creamy. Mix until well combined.
- Ice the breakfast bars– Drizzle the breakfast bars with the icing, cut into 8 equal pieces. Enjoy!
Storing Berry Breakfast Bars
Because of the fruit filling these breakfast bars need to be stored in the refrigerator. Store the Berry breakfast Bars in the refrigerator for up to 7 days. If they last that long! Allow to come up to room temperature before serving.
