Celebrating summer has never been more delicious! Bruschetta chicken is brimming with the fresh flavors of the garden and can be prepared in just 30 minutes. For those who love bruschetta, this recipe is a must-try. Currently, I’m surrounded by an abundance of fresh tomatoes and basil, making this chicken dish a recurring favorite in my kitchen.

Friends, this Bruschetta Chicken recipe is so incredibly easy to make. It’s perfect for busy weeknights when you’re short on time for cooking, yet it still appears and tastes as though a great deal of time and effort has been put into it. It’s also the perfect meal to serve when entertaining guests.

You only need 8 ingredients to make this simple chicken dish!

  • Chicken – I like using boneless skinless chicken breasts for this recipe.
  • Seasonings – Only salt, pepper and garlic powder are needed.
  • Oil Olive oil or any neutral tasting oil is used for searing the chicken breasts.
  • Tomatoes – Fresh tomatoes work best in this recipe.
  • Cheese – Fresh mozzarella cheese or shredded mozzarella can be used.
  • BasilFresh basil is best in this recipe!

How to Make Bruschetta Chicken

STEP 1

Mix the tomatoes, basil, mozzarella cheese, and salt together. Set aside to let the flavors marry.

STEP 2

Slice each chicken breast horizontally into thinner slices to expedite cooking. Thinner pieces cook more quickly. However, if you favor larger portions, you may opt to keep the breasts intact.

STEP 3

Season each side of the chicken breasts with the remaining salt, pepper and garlic powder.

STEP 4

Pan-sear the chicken breasts in a large sauté pan with olive oil over medium-high heat. Cook the breasts for 4-6 minutes on each side, or until the internal temperature of the chicken reaches 165°F.

STEP 5

Spoon the tomato mixture onto each chicken breast and place them in the oven. Broil for 1-3 minutes, or until the cheese has melted and is lightly browned. Enjoy!

How to Prep Ahead

This recipe pairs wonderfully with pan-seared or oven-baked chicken. If you need a quick dinner that can be prepped in advance and cooked when you’re ready, simply follow the instructions below.

Combine the tomatoes, basil, mozzarella cheese and salt. Cover and place in the refrigerator until needed.

Cut each chicken breast in half horizontally to make thinner pieces.

Season each side of the chicken breast with the salt, pepper and garlic powder.

Skip the pan searing. Place on a parchment lined sheet tray. Wrap and refrigerate until needed.

When ready to cook just preheat the oven to 375°F.

Bake the chicken for 20 minutes or until the internal temperature reaches 165° F.

Spoon the tomato mixture onto each chicken breast and place them in the oven. Switch the oven to broil for 1-3 minutes, or until the cheese has melted and is lightly browned.
