This delicious Breakfast Pizza is loaded with breakfast sausage, white gravy, and mozzarella cheese all on a simple scratch made pizza dough. This pizza is perfect for breakfast, brunch, lunch or dinner! This is the pizza version of biscuits and gravy that you never knew you needed!
This was a huge hit the first time I made this recipe for my family. It has quickly become one of my family’s favorite pizzas. We eat a lot of pizza, homemade of course, and it was no surprise that this breakfast version would become a favorite. I mean, who wouldn’t love a pizza version of biscuits and gravy with sausage?
This recipe was dreamed up many years ago, when I was talking about school breakfast/lunches with my sister. We both loved the breakfast pizza we used to get in elementary school. I’m not sure what the school breakfast pizza was actually made from, I just remember it was rectangular with sausage and a white sauce. I could only imagine it was made from white gravy and breakfast sausage. So that’s what I made. Oh, my goodness was I surprised at how good it turned out! It brought my right back to that cafeteria in elementary school. I loved it! It is definitely a recipe that I keep in rotation.

Homemade Pizza Dough
This recipe uses my Essential Pizza Dough recipe. I cut the recipe in half to make this pizza. The Essential Pizza Dough recipe really is a great all-purpose pizza dough that is easy to follow and produces a fantastic crust. Making homemade pizza dough is super easy to do and cuts cost at the grocery store. Especially when you keep a stocked pantry.
Tips
- When making this recipe for breakfast you can make the dough the night before, place it in a large bowl, (lightly coat in oil) cover and store it in the refrigerator overnight. In the morning continue with the recipe. After assembling the recipe, you can allow the pizza to rise a little for a thicker crust or back immediately for a thinner crust.
- Prep the sausage and gravy the night before to move the recipe along faster in the morning.
Freezer Friendly
This pizza recipe is freezer friendly! This pizza is great for stocking your freezer with breakfast food that is fully cooked and ready to reheat. To freeze: Fully cook and cut the pizza. Place the pieces (not touching) on a parchment lined baking sheet and place in the freezer until completely frozen. Individually wrap the pieces in plastic wrap and place in a freezer bag or container.
To reheat: Either thaw the pizza then reheat in a 350° F oven until warmed through. Or place frozen slices in a 350° F for 20 minutes or until heated through.

Pizza Dough
In your mixer, mix together the warm water, yeast and warm milk and allow to sit for a few minutes so that the yeast has time to bloom.

Mix in the honey, salt, olive oil and half of the flour. Using the dough hook on its lowest speed, start to knead the dough. Continue kneading the dough and start adding 1/2 cup of flour at a time, only using enough flour for the dough to come together. You may or may not need all of the flour. Or you may need more flour.

Once you have added as much flour as it needs, turn the speed up to the next setting and knead the dough for approximately 10 minutes. The dough should be elastic, soft and tacky, not sticky. Remove the dough hook, lightly coat the dough with oil, cover the bowl with a towel and set aside to proof until it doubles in size, 1 1/2 to 2 hours.

In a large skillet, over medium heat brown the sausage. Crumble it as it cooks. When it is cooked through remove from the pan, place on a paper towel to drain off the grease. Set aside.

In the same skillet you cooked the sausage in, over medium heat, add in the butter. Once melted whisk in the flour to make the roux. Cook for 1 minute then slowly whisk in the milk until smooth and thickened into a gravy. Season to taste with salt and pepper. Set aside. Do not add hot gravy to pizza dough. Let it cool before using it.

Preheat the oven to 450° F. Lightly oil a work surface and roll the dough out into an 11"x16" rectangle. Place on lightly oiled or parchment lined baking sheet. Stretch back out to the original size.

Spread the gravy all over the pizza dough, sprinkle over 1 1/2 cups of the shredded mozzarella. Top with sausage and remaining 1 cup of shredded mozzarella.

Bake for 15 minutes or until the cheese is lightly browned. Cool slightly before slicing. Enjoy!
Going to try individually freezing slices for my husband to take to work. Have you tried microwaving them instead of reheating in oven? If so, did it still taste good and for how long? He only has a microwave for reheat options.
I haven’t tried reheating the slices in the microwave, but I’m sure it would be fine.
