Mint Chocolate Cookies

If you're a mint chocolate fan like me, these Mint Chocolate Cookies are about to become your new favorite! Soft, chewy, fudgy, and perfectly minty, these cookies are simply perfect!

This recipe is an adaptation of my favorite Triple Chocolate Cookies recipe, tweaked just for the holiday season, or really anytime you're craving that classic mint and chocolate combo! Honestly, there's nothing better than the smell of chocolate and mint baking in the oven!

I love baking cookies for Christmas, and these chocolate chocolate chip cookies with mint fit right alongside my other favorites like Snickerdoodle Cookies and Chai Spiced Oatmeal Cookies!

Key Ingredients & Substitutions

  • Unsalted Butter, melted and cooled for the best texture. Melt the butter first and let it sit to cool while you work on gathering the remaining ingredients.
  • Granulated and Light Brown Sugar for sweetness and chewiness. All of one can be substituted if needed.
  • Cocoa Powder, Dutch processed is best in this recipe.
  • Mint Chocolate Chips are the star of this cookie recipe! If you cannot find mint chips, substitute for Andes chocolates and chop them up.

Tips for Mint Chocolate Chip Cookies

  • Chill the dough to prevent the cookies from spreading too much.
  • Don't overbake them! They should look slightly underbaked in the center. The cookies will continue cooking as they cool.
  • Press a few extra mint chips on top of the dough before baking for that bakery-style look!

Make Ahead and Storage Tips

These Mint Chocolate Cookies are great to make ahead. You can scoop the cookie dough onto a parchment lined baking sheet, cover, and refrigerate if you're not baking them right away. I don't recommend refrigerating the dough unscooped, as it may become too difficult to portion after several hours in the refrigerator.

Once baked, store the cookies in an airtight container at room temperature for up to 4 days. Freeze unbaked cookie dough balls for up to 3 months.

Mint Chocolate Cookies

Mint Chocolate Cookies

Soft, chewy, and perfectly minty, these Mint Chocolate Cookies are packed with both chocolate chips and mint chips. A chocolate lover's dream!

Ingredients
  

  • ⅓ cup unsalted butter melted
  • ½ cup light brown sugar packed
  • ½ cup granulated sugar
  • 2 large eggs
  • ½ teaspoon vanilla extract
  • 1 cup all purpose flour
  • ⅓ cup cocoa powder
  • ¼ teaspoon salt
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ cup chocolate chips
  • 1 cup mint chips

Instructions
 

  • In the bowl of a mixer combine the melted and cooled butter, both sugars, eggs, and vanilla extract. Mix until fully combined.
  • In a separate bowl, whisk together flour, cocoa powder, salt, baking powder, and baking soda.
  • Slowly add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chocolate chips and mint chips.
  • Scoop cookie dough using a 2-tablespoon scoop onto a parchment lined baking sheet. Refrigerate for 1 hour to prevent spreading too much.
  • Preheat oven to 350°F. Bake cookies for 13 minutes. Let cool on the baking sheet for a few minutes before transferring to a wire rack. Enjoy!
