- ⅓ cup unsalted butter melted
- ½ cup light brown sugar packed
- ½ cup granulated sugar
- 2 large eggs
- ½ teaspoon vanilla extract
- 1 cup all purpose flour
- ⅓ cup cocoa powder
- ¼ teaspoon salt
- 1 teaspoon baking powder
- ¼ teaspoon baking soda
- ½ cup chocolate chips
- 1 cup mint chips
In the bowl of a mixer combine the melted and cooled butter, both sugars, eggs, and vanilla extract. Mix until fully combined.
In a separate bowl, whisk together flour, cocoa powder, salt, baking powder, and baking soda.
Slowly add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chocolate chips and mint chips.
Scoop cookie dough using a 2-tablespoon scoop onto a parchment lined baking sheet. Refrigerate for 1 hour to prevent spreading too much.
Preheat oven to 350°F. Bake cookies for 13 minutes. Let cool on the baking sheet for a few minutes before transferring to a wire rack. Enjoy!
