Ingredients
  

  • cup quinoa rinsed and drained
  • 2 tablespoons olive oil or any neutral tasting oil
  • 4 cloves garlic minced
  • 1 ⅓ cups water
  • ½ teaspoon salt
  • 3 tablespoons fresh parsley minced
  • 2 teaspoons fresh thyme minced
  • 2 teaspoons fresh oregano minced
  • 2-3 teaspoons fresh lemon juice
  • 1 lemon zested

Instructions
 

  • Rinse and drain the quinoa 20 minutes before cooking. 
  • In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 30 seconds. Stir in the rinsed and drained quinoa, toasting it for 1-2 minutes.
  • Add in the water and salt, then bring the mixture to a boil. Cover, reduce the heat to low, and let it simmer for 15 minutes.
  • Once cooked, remove the pan from heat and let it sit, covered, for 10 minutes. This helps the quinoa absorb any remaining moisture.
  • Remove the lid, fluff the quinoa with a fork, and stir in the fresh herbs, lemon zest, and lemon juice. Enjoy!
