Grilled Chicken Salad

Grilled Chicken Salad is a great light lunch or dinner option. This grilled chicken recipe creates a flavorful juicy chicken that is perfect for a summer meal. It's nice to switch things up sometimes and have something light and refreshing for dinner.

Grilled Chicken Salad

Salad can be boring sometimes, having a flavorful grilled chicken, and lots of different toppings can make salad fun and tasty for everyone. For this recipe it is all about the chicken and packing it full of flavor. Afterall it is the main topping for the salad. I like to use fresh herbs and garlic straight from the garden to bring a light fresh flavor to the chicken. Fresh herbs are perfect for salads, whether you use them for the meat, croutons or dressing, fresh herbs have far better flavor than dried herbs.

With that being said, if you do not have fresh herbs, you can certainly use dried herbs, just use a little more than the amount of fresh herbs in the recipe.

As far as grilling goes, I actually used my cast iron grill pan for this recipe. It is one of my favorite pans for getting lovely, charred grill marks and flavor on meats and vegetables, when I am not wanting to go outside to grill. This summer has been extremely hot and dry, so being able to "grill" inside is nice! You can grill the chicken on an actual grill if you like. It is also great seared in a skillet.

Serving Salads at a Party

Salads are a great option for a party, barbeque or game day. Prepping everything in advance is easy and makes the day of the party go easier. Since most of the components are fresh, prepping in advance is as easy as cutting everything up and storing it in bowls until needed. With so many topping and dressing options you can easily make everyone happy.

You can also offer other meats, like deli turkey, ham, shrimp or beef.

Grilled Chicken Salad

Grilled Chicken Salad is simple and perfect for any weeknight or lunch.  This grilled chicken is light and refreshing yet full of flavor.  Perfect for enjoying a light dish.

Ingredients
  

  • 2 chicken breasts sliced thinly or left whole
  • 2 clove garlic minced
  • 2 Sprig thyme chopped
  • 2 Sprig oregano chopped
  • 1 teaspoon parsley chopped
  • 1 drizzle olive oil
  • 1- 2 teaspoon salt
  • As needed pepper
  • As Needed lettuce

Toppings

  • As Needed boiled egg chopped
  • As Needed tomato died
  • As Needed cucumber diced
  • As Needed carrots shredded
  • As Needed bacon cooked and chopped
  • As Needed cheddar cheese shredded
  • As Needed croutons

Instructions
 

  • Mix together the herbs, salt, pepper, minced garlic and olive oil.  Take the herb mixture and evenly coat the chicken.
  • In a grill pan or on a grill cook the chicken until the internal temperature reaches 165°F.  Rest the chicken for 5-6 minutes then slice and serve.  Enjoy!
  • Assemble salads and enjoy!
