Super Easy Beef Quesadillas are perfect for busy weeknight dinners or quick lunches. If you're in search of a fantastic, cheesy beef quesadilla, you've arrived at the right spot.

We often prepare quesadillas for quick lunches or simple dinners. They are not only easy to make but also convenient to prepare in advance for the week. I always make extra so I can include them in my oldest son's lunch box or keep them on hand for a speedy lunch at home for my younger children.

I always have the ingredients for these quesadillas on hand, making them my go-to meal for a quick yet homemade dish. A well-stocked pantry is key to whipping up simple, speedy meals from scratch whenever necessary.

How To Make Easy Beef Quesadillas

  • • Cook the beef and onions: Crumble the meat as it cooks. Season with spices and cook until done. Add in the minced garlic and cook for 30 seconds. Strain off the grease and set aside.
  • • Assemble the quesadillas: Lay out one tortilla, sprinkle over a little cheese, add ⅓ of the meat, then top with more cheese. Place another tortilla on top. Repeat with the remaining tortillas.
  • • Cook the quesadillas: Heat a large skillet over medium heat and drizzle in a little oil. Place a quesadilla in the skillet and cook for 2-3 minutes or until browned. Flip and cook for another 2-3 minutes, or until golden. Remove from the pan and repeat with the rest. Enjoy!

Topping Suggestions

Yes, quesadillas need toppings too! A great way to add tons of flavor to your quesadilla is to top it with your favorite dips and sauces. A few of our favorites are:

Guacamole - Guacamole is FANTASTIC smeared on top of a quesadilla.

Pico de Gallo - Another favorite of mine! I like to spoon it on top, or put some inside of the quesadilla, when I am eating it.

Sour Cream - This is a common quesadilla condiment. I love dipping quesadillas in sour cream.

Hot Sauce - Hot sauce is also a must for quesadillas, tacos, or anything!

Lime Juice - A simple squeeze of fresh lime juice is fantastic on the browned tortilla.

Easy Beef Quesadillas

These Easy Beef Quesadillas are a great meal for busy weeknight dinners or for quick lunches. Quick, simple and delicious. You can't go wrong with quesadillas. Kid friendly and meal prep friendly.

Ingredients
  

  • 1 pound ground beef
  • ½ cup onion small diced
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ½ teaspoon chili powder
  • 1 ½ teaspoons cumin
  • 1 teaspoon paprika
  • 1 pinch chipotle powder or cayenne
  • 6 medium flour tortillas 10" tortillas
  • 2 ½ cups shredded cheese cheddar, quesadilla or your favorite cheese

Instructions
 

  • In a large skillet over medium heat add the ground beef and onions.  Cook, crumbling up the meat as it cooks. Season with all of the spices and cook until done. Add in the minced garlic and cook for 30 seconds. Strain off the grease. Set aside.
  • Lay out one tortilla, sprinkle over a little cheese, add ⅓ of the meat, top with more cheese. Place another tortilla on top. Repeat with the remaining tortillas.
  • Heat a separate large skillet over medium heat.  Drizzle in a small amount of oil.  Place one quesadilla in the skillet, swirl around to cover the tortilla with the oil.  Cook for 3-4 minutes or until browned.  Drizzle a small amount of oil on the top tortilla, flip and cook until browned.
  • Remove from the pan and continue with the remaining quesadillas.  Using oil as needed.  Cut into 4 pieces and serve with your favorite toppings.  Enjoy!
