These Red Velvet Cookies are perfectly, soft, chewy and just downright delicious! Made from scratch with cream cheese baking chips and white chocolate chips, you'll want to make them again and again!
I always use Kosher salt in my kitchen! If using table salt, start with half the amount and adjust to taste, as it is much "saltier" by volume.
Instructions
In a medium mixing bowl whisk together the flour, baking powder, baking soda, salt and cocoa powder until well combined. Set aside.
In a mixing bowl cream together the butter and granulated sugar until light and fluffy. Add in the whole egg and egg yolk and mix until incorporated.
Add in the vanilla extract, food coloring and buttermilk. Mix until fully combined.
Stir in the dry ingredients and mix until fully combined.
Now fold in the chocolate chips and cream cheese baking chips. Refrigerate for 1 hour.
Preheat an oven to 350° F and line a baking sheet with parchment paper.
Using a 1 ounce portion scoop or two heaping tablespoons, scoop out the cookie dough. Once all of the dough has been portioned roll each cookie dough ball in the powdered sugar. Place 1-2 inches apart on the baking sheet and bake for 12-14 minutes. Enjoy!
