Instructions
Prepare the pulled pork using my Dutch Oven Pulled Pork recipe or warm up your favorite pulled pork in a skillet over medium heat. (If using your own pulled pork, you may also need barbecue sauce.)
Make the spicy coleslaw by combining shredded cabbage, thinly sliced red onions, chopped jalapeños, mayo, sugar, apple cider vinegar, cilantro, lime juice, salt, pepper, and chipotle powder in a large bowl. Mix well and adjust seasonings to taste.
Slice the Hawaiian rolls in half and lightly butter the cut sides. Toast in a skillet or under the broiler until golden brown.
Assemble the sliders by layering pulled pork on the bottom half of each roll, a drizzle of barbecue sauce if desired, followed by crispy bacon and a generous scoop of spicy coleslaw. Top with the other half of the roll and serve immediately!
Notes
Dutch Oven Pulled Pork - This recipe will make more than what you need to make 12 sliders.
Make Ahead – The pulled pork can be made a day in advance and reheated for easy assembly.
Adjust the Spice – Add extra jalapeños or chipotle powder to the coleslaw for more heat or leave them out if you prefer a milder coleslaw.
Crispy Rolls – Toasting the Hawaiian rolls adds great texture and prevents them from getting soggy.
Extra Sauce – If you love saucy sliders, drizzle a little extra barbecue sauce over the pulled pork before adding the coleslaw.
