I always use Kosher salt in my kitchen! If using table salt, start with half the amount and adjust to taste, as it is much "saltier" by volume.
Instructions
Preheat an oven to 375° F and line a muffin pan with liners.
In a large bowl combine the flour, granulated sugar, salt, baking powder, zest of 2 oranges and poppy seeds. Whisk until fully combined.
In a separate bowl whisk together the milk, juice of 1 orange, melted coconut oil, eggs and vanilla extract.
Pour the wet ingredients into the dry ingredients and mix just until fully incorporated. Scoop into the prepared muffin tin and bake for 16-18 minutes. Once done, cool completely before decorating.
While the muffins are cooling whisk together the powdered sugar, milk and vanilla extract.
Once the muffins are completely cool (about 20 minutes) dip the muffins in the icing to fully covered the tops. Enjoy!
