Ingredients

  • 2 ¼ cups all-purpose flour
  • ¾ cup granulated sugar
  • ¼ teaspoon salt
  • 2 oranges zested 1 orange juiced
  • 1 tablespoon baking powder
  • 2 tablespoons poppy seeds
  • 1 cup milk (+ 2 tablespoons)
  • ½ cup coconut oil melted
  • 2 large eggs
  • 1 ¼ teaspoons vanilla extract
  • ½ cup powdered sugar
I always use Kosher salt in my kitchen! If using table salt, start with half the amount and adjust to taste, as it is much "saltier" by volume.

Instructions

  • Preheat an oven to 375° F and line a muffin pan with liners.
  • In a large bowl combine the flour, granulated sugar, salt, baking powder, zest of 2 oranges and poppy seeds. Whisk until fully combined.
  • In a separate bowl whisk together the milk, juice of 1 orange, melted coconut oil, eggs and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and mix just until fully incorporated. Scoop into the prepared muffin tin and bake for 16-18 minutes. Once done, cool completely before decorating.
  • While the muffins are cooling whisk together the powdered sugar, milk and vanilla extract.
  • Once the muffins are completely cool (about 20 minutes) dip the muffins in the icing to fully covered the tops. Enjoy!
