One Pot Cheesy Taco Skillet

Ingredients
  

  • 1 ½ lb ground beef
  • ½ Large onion small diced
  • 3 Cloves garlic minced
  • 2 tablespoon tomato paste
  • 2 teaspoon salt
  • To Taste pepper
  • 1 Tablespoon cumin
  • 1 Tablespoon garlic powder
  • 2 teaspoon paprika
  • 1 Teaspoon chili powder
  • ¼-1/2 Teaspoon chipotle powder or cayenne powder
  • 1 Teaspoon onion powder
  • ½ Teaspoon dried oregano
  • 10 oz rotel 10 oz. can
  • 2 (14-oz.) Cans black beans drained and rinsed
  • 2 cup cheddar cheese shredded
  • As Needed green onions for garnish
  • As Needed cilantro for garnish

Instructions
 

  • In a large skillet over medium heat combine the ground beef and diced onions.  Sauté until the beef is fully cooked and the onions are tender.  
  • Add the minced garlic to the skillet and continue cooking for 30 seconds.  Remove from the heat and strain off the fat.
  • Return the meat back to the skillet and place over medium low heat. Combine the tomato paste and all of the seasonings with the meat.  Cook just until the tomato paste is fully incorporated.  Turn the heat off.
  • Turn the oven to broil.  Add the rotel and black beans to the skillet, stirring well to combine.
  • Sprinkle the cheese over the mixture and place in the oven for 3-4 minutes to melt the cheese.
  • Garnish with sliced green onions and chopped cilantro.  Enjoy!
