Lemon Garlic Asparagus

Ingredients
  

  • 1 pound fresh asparagus
  • 1 tablespoon olive oil
  • ¾ teaspoon salt
  • to taste pepper
  • 1 lemon
  • 3 cloves garlic minced
  • 1 tablespoon butter
I always use Kosher salt in my kitchen! If using table salt, start with half the amount and adjust to taste, as it is much "saltier" by volume.

Instructions
 

  • Preheat the oven to 425°F and line a baking sheet with parchment paper.
  • Rinse the asparagus and pat dry. To trim, gently bend the stalk near the bottom until it snaps naturally. You can also line up a bunch and slice off the ends all at once.
  • Place the trimmed asparagus on a parchment-lined baking sheet. Drizzle with olive oil and toss gently to coat. Season with salt and pepper to taste.
  • Zest one lemon directly over the asparagus. Sprinkle over the minced garlic, then place small pats of butter across the top.
  • Roast for 10–12 minutes, or until the asparagus is tender. Immediately squeeze fresh lemon juice over the asparagus. Enjoy!

Notes

  • Choose fresh, firm stalks of asparagus for the best results.
  • Start checking the asparagus at 10 minutes. Thin stalks of asparagus will cook faster than thicker stalks.
