Total Time 1 hour hr 5 minutes mins
- 4 chicken breasts
- ¼ cup olive oil or any neutral tasting oil
- 1 tablespoon apple cider vinegar
- 1 tablespoon Dijon Mustard
- 1 teaspoon salt
- ½ teaspoon pepper
- 3 cloves garlic minced
- ½ teaspoon red pepper flakes
- ¼ teaspoon honey
- 1 ¼ teaspoons Italian seasoning
In a small bowl mix together the olive oil, apple cider vinegar, Dijon mustard, salt, pepper, minced garlic, red pepper flakes, honey and Italian seasoning.
Place the chicken breasts in a large zip-top bag or shallow dish. Pour the Italian dressing marinade over the chicken, ensuring each piece is well-coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 24 hours for maximum flavor.
Preheat your oven to 400°F. Transfer the marinated chicken to a baking dish and discard any excess marinade. Bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F. Enjoy!
- One 4-6 ounce chicken breast is usually enough for one serving. When I am using larger chicken breasts I like to cut them into 2 pieces.
- If time allows, marinating overnight will result in the most flavorful and juicy chicken.
-
Instead of baking, try grilling the chicken for a delicious smoky flavor. Cook over medium-high heat for about 5-7 minutes per side.
- This chicken is perfect for meal prepping! Slice it up and store it in the fridge to add to salads, wraps, or grain bowls throughout the week.
