Ingredients

Homemade Croutons

  • 4 cups bread cut into ¾-inch cubes
  • ¼ cup olive oil or melted butter
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder

Homemade Caesar Dressing

  • 1 cup mayo
  • 3-4 oil packed anchovy fillets
  • 2 tablespoons water
  • cup parmesan cheese shredded or grated
  • 3 cloves garlic
  • 1 tablespoon lemon juice
  • ¼ teaspoon salt
  • ¾-1 teaspoon pepper

Remaining Ingredients

  • 2-3 heads romaine lettuce rinsed and torn or cut into bite sized pieces
  • ⅓-1/2 cup parmesan cheese shredded
  • cracked black pepper to taste
I always use Kosher salt in my kitchen! If using table salt, start with half the amount and adjust to taste, as it is much "saltier" by volume.

Instructions

How To Make Homemade Croutons

  • Preheat your oven to 325°F and line a baking sheet with parchment paper. Spread the bread cubes out evenly. Drizzle with oil and season with salt, pepper, garlic powder, and oregano.
  • Toss until everything’s coated, then spread into a single layer. Bake for 25 to 30 minutes, stirring halfway through, until dry and toasty.

How To Make Homemade Caesar Dressing

  • Add everything to a wide-mouth mason jar or cup that fits an immersion blender (or add to a blender). Blend until smooth and creamy, this takes less than a minute. If you prefer a thinner consistency, just blend in another tablespoon or two of water until it’s just right.

Assembling the Salad

  • Place the prepped lettuce in a large bowl. Add the dressing and toss gently to coat. Start with a little and add more as needed. Top with croutons and freshly shredded Parmesan cheese and cracked pepper. Enjoy!

Notes

  • If you do not have a blender to make the Caesar dressing, you can still make it by hand. Start by finely mincing the garlic cloves and anchovy fillets, then mash them together with the side of your knife until a smooth paste forms. Add all of the dressing ingredients to a bowl, using grated Parmesan instead of shredded, and whisk until everything is fully combined.
  • If prepping in advance wait to assemble the salad until just before serving.
