Ingredients
  

Filling

  • 6 cups blackberries fresh or frozen
  • ¼ cup granulated sugar
  • ¼ cup light brown sugar
  • 2 tablespoons cornstarch
  • ¼ teaspoon vanilla extract

Cobbler Batter

  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • 2 ¼ teaspoons baking powder
  • ½ teaspoon salt
  • ¾ cup milk room temperature
  • 3 ounces unsalted butter melted
  • ½ teaspoon vanilla extract
I always use Kosher salt in my kitchen! If using table salt, start with half the amount and adjust to taste, as it is much "saltier" by volume.

Instructions
 

  • Preheat your oven to 375°F. Generously grease a 9x13-inch baking dish and set aside.
  • In a large bowl, combine the blackberries with ¼ cup of granulated sugar, ¼ cup of brown sugar, cornstarch, and a splash of vanilla extract. Stir gently until everything is evenly coated.
  • Transfer to the prepared baking dish and spread out evenly.
  • In a separate bowl, whisk together the flour, ½ cup of granulated sugar, baking powder, and salt. Stir in the milk, melted butter, and vanilla extract until smooth. Spread evenly over the blackberry filling. Bake for 40-50 minutes. Enjoy!

Notes

  • If your blackberries are extra tart, feel free to add an extra tablespoon or two of sugar to the filling.
  • Don’t thaw frozen berries before using.
  • Let the cobbler rest for 10 minutes before serving to allow the filling to set a bit.
  • A scoop of vanilla ice cream makes this cobbler even more irresistible.
