This Easy Blackberry Cobbler is the perfect summer dessert, sweet, juicy blackberries baked under a buttery cakey topping. Made with simple pantry staples and ready in under an hour, this homemade cobbler is a no-fuss treat that's always a hit.
I always use Kosher salt in my kitchen! If using table salt, start with half the amount and adjust to taste, as it is much "saltier" by volume.
Instructions
Preheat your oven to 375°F. Generously grease a 9x13-inch baking dish and set aside.
In a large bowl, combine the blackberries with ¼ cup of granulated sugar, ¼ cup of brown sugar, cornstarch, and a splash of vanilla extract. Stir gently until everything is evenly coated.
Transfer to the prepared baking dish and spread out evenly.
In a separate bowl, whisk together the flour, ½ cup of granulated sugar, baking powder, and salt. Stir in the milk, melted butter, and vanilla extract until smooth. Spread evenly over the blackberry filling. Bake for 40-50 minutes. Enjoy!
Notes
If your blackberries are extra tart, feel free to add an extra tablespoon or two of sugar to the filling.
Don’t thaw frozen berries before using.
Let the cobbler rest for 10 minutes before serving to allow the filling to set a bit.
