Christmas Rice Krispie Treats

Made with peanut butter and chocolate, these fun and festive Christmas Rice Krispie Treats Trees are the perfect holiday treat to spread some cheer!

Ingredients
  

  • 3 tablespoons unsalted butter
  • 5 ½ cups mini marshmallows
  • cup creamy peanut butter
  • 6 cups rice krispies cereal
  • as needed green candy melts
  • as needed Christmas sprinkles

Chocolate Peanut Butter Topping

  • 1 cup semi-sweet chocolate chips
  • ¼ cup creamy peanut butter
I always use Kosher salt in my kitchen! If using table salt, start with half the amount and adjust to taste, as it is much "saltier" by volume.

Instructions
 

  • Line a 9x13 baking dish with parchment paper. This will make the rice krispie treats easier to remove for cutting and decorating.
  • Melt the butter in a large pot over low heat. Stir in the marshmallows, keep stirring until fully melted. Now stir in the peanut butter and continue stirring until smooth. Remove from heat.
  • Immediately add in all of the rice krispies cereal and stir until fully combined. Press evenly into the prepared 9x13 baking dish. Allow to cool completely before making the chocolate topping.

Chocolate Peanut Butter Topping

  • In a small microwave-safe bowl, melt the chocolate. Stir in the peanut butter until smooth, then spread it evenly over the Rice Krispie treats. Chill in the refrigerator for 10 minutes, or until the chocolate is set.

Decorating

  • Using the parchment paper, lift the rice krispie treats out of the baking dish. Set on a cutting board and cut into 16 equal triangles. (Two of the end pieces won’t be perfect triangles—consider those a tasty snack! 😄)
  • Melt the green candy melts according to the package instructions. Transfer to a piping bag and pipe a zigzag pattern, starting small at the top and getting wider as you move toward the bottom. Immediately add sprinkles. Be sure to work on one tree at a time, as the candy melts dry quickly. Enjoy!
