Equipment

Ingredients
  

  • 1 cup mayo
  • 3-4 oil packed anchovy fillets
  • 2 tablespoons water
  • cup parmesan cheese shredded or grated
  • 3 cloves garlic
  • 1 tablespoon lemon juice
  • ¼ teaspoon salt
  • ¾-1 teaspoon pepper
I always use Kosher salt in my kitchen! If using table salt, start with half the amount and adjust to taste, as it is much "saltier" by volume.

Instructions
 

  • Add all of the ingredients to a wide-mouth mason jar or cup that fits an immersion blender.
  • Using the immersion blender, blend until the mixture is smooth and creamy. This takes less than a minute!
  • If you prefer a thinner consistency, add 1 to 2 more tablespoons of water until you reach your desired texture. Enjoy!

Notes

You can also make it by hand, just finely mince the anchovy fillets and garlic into a paste like consistency before mixing everything together in a bowl. If you're going the hand-mixed route, be sure to use grated Parmesan cheese so it blends in well.
