Ingredients
  

Cobbler Filling

  • 4 teaspoons cornstarch
  • ¾ cup granulated sugar
  • 1 cup water
  • 2 tablespoons butter
  • 6 cups mixed berries blueberries, raspberries, strawberries, blackberries

Batter

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • ¾ cup milk
  • 2 teaspoons vanilla extract
I always use Kosher salt in my kitchen! If using table salt, start with half the amount and adjust to taste, as it is much "saltier" by volume.

Instructions
 

  • Preheat the oven to 350°F and lightly grease a 9x13 baking dish.
  • In a medium saucepan, combine the cornstarch, 1 cup granulated sugar, and water over medium heat. Bring to a boil, stirring frequently. Once boiling, remove from heat and whisk in the butter until melted. Set aside.
  • In a medium bowl, whisk together the flour, sugar, baking powder, and salt. Stir in the milk and vanilla extract until fully combined.
  • Spread the berries out evenly in the baking dish. Pour the cornstarch mixture evenly over the berries.
  • Pour the batter over the top of the berries and smooth it out as best as you can. Bake for 50-55 minutes or until the top is golden brown and the berry filling is bubbling around the edges.
  • Let cool slightly before serving. Enjoy!

Notes

    • If you’re using a lot of blackberries, you can increase the sugar to 1 cup since they tend to be tart.
    • If using strawberries, cut the larger ones into smaller pieces so they bake evenly.
    • You can mix berries like blueberries, raspberries, blackberries, and strawberries for a great blend of flavors.
    • If you’re using frozen fruit, just keep in mind that it can create a more liquidy filling. For the best results, try to use fewer strawberries than other berries, since they have a higher moisture content.
