Can you make delicious, crispy fries in the oven? Yes! It is also pretty easy to do. These really are The Best Oven Fries, ever. Skip the bag, and skip the frying, this recipe is exactly what you are looking for, perfectly crispy fries cooked right in your oven. A tad bit healthier than the typical fried version, but a lot less hands on time.

This is my go-to recipe for fries. I don’t even bother with frying them, when I know I can make them just as good in the oven. I love using my oven when I am cooking, it means I can focus on other things in the kitchen, or kids needing help with something. And if I am being perfectly honest, I don’t really like frying stuff. I mean, don’t get me wrong, I do like to make these Buttermilk Chicken Tenders and these Garlic Parmesan Chicken Wings, but when I can make something just as good in the oven, I’m all for it. My family really loves these oven fries, hopefully your family will too. Oh, and I forgot to mention, these oven fries pass the dip test, no soggy fries here. These fries can hold up to dipping, which is a must for a good fry.

How to Make The Best Oven Fries

Now there is one important step to making these fries crispy, that is soaking them in cold water for at least 30 minutes before baking them. This step is necessary and should not be skipped. When you soak the potatoes in cold water it pulls some of the starch to the surface of the potatoes, which makes them crispy when baked. I have tested this side by side with fries that I did not soak first, soaking them first really makes a difference.

1. Peel, cut and place in a bowl of cold water. Place in the refrigerator for at least 30 minutes. You can leave the skins on the potatoes; the fries will still turn out good.

2. After 30 minutes drain the water off of the potatoes, pat them dry.

3. Lay the potatoes out onto a parchment lined baking sheet, toss in oil and season with salt and pepper. Or your favorite fry seasoning!

4. Place in a 400° F oven and bake for 20 minutes. Stir, then bake for another 20 minutes or until lightly browned and crispy. Enjoy!

What type of potatoes should you use?

Russets are hands-down the best potatoes to use when making fries. Other varieties can be used, but in my experience, russets always make the best fries. This is because of their high starch content. The starch is what makes the russet potato crispy when fried or baked. Other varieties like Yukon Gold, which are good for making mashed potatoes, don’t get as crispy when baked. They lack the high starch content that russets have.

  1. Peel and cut the potatoes into 1/2" thick sticks.  Place in a bowl and cover with water.  Place in the refrigerator and chill for 30 minutes.

  2. Preheat an oven to 400° F and line a baking sheet with parchment paper.

  3. Drain the water off of the potatoes.  Pat dry and lay out on the parchment lined baking sheet.  Toss with the oil, season with salt and pepper.

  4. Place in the oven and bake for 20 minutes.  Stir and bake for another 20 minutes or until the fries are lightly browned and crispy.  Enjoy!
