Perfect for Valentine’s Day or just a quick tasty treat. These Strawberry Shortcake Rice Krispie Treats are a yummy twist on the classic marshmallowy treats we all know and love. Freeze dried strawberries, vanilla Oreos and a little extra vanilla extract take the classic rice Krispie treats up a notch, or two.
These rice krispie treats are so good! I love the fresh strawberry flavor paired with the gooey marshmallow. The vanilla Oreos give it that vanilla cake and cream flavor that you think of when you think of strawberry shortcake. These little treats were such a fun recipe to create. I am all for the lovely strawberry flavor. The kiddos love them too!
The trick to the best, natural, strawberry flavor is to use freeze dried strawberries. Fresh strawberries are far too wet for this treat and dried strawberries would be too gummy. Freeze dried strawberries are perfect. Chopping them up into smaller pieces will also yield a fine strawberry powder that is great for distributing the fresh strawberry flavor throughout the rice krispie treats better.
Ingredients Needed
- Rice Krispies Cereal
- Mini Marshmallows – I like using mini marshmallows when making rice krispies treats. They melt faster than the large marshmallows.
- Butter – Real, unsalted butter works best for these treats.
- Vanilla Extract
- Freeze Dried Strawberries – You can find these at your local grocery store or online.
- Vanilla Oreos – Just regular not the double stuffed.

How to make strawberry shortcake rice krispie treats
- Lightly oil a 9×13 dish.
- Roughly chop the freeze-dried strawberries into small pieces.
- Chop oreos into small pieces.
- Melt the butter in a large pan. Add in the marshmallows and continuously stir until melted. Remove from heat and immediately add in the vanilla extract, rice krispies cereal, half of the oreos and 1/2 cup of the chopped strawberries, along with the powder that was produced from cutting the strawberries.
- Stir until fully combined. Spread evenly in the prepared dish. Using a silicone spatula makes this easy.
- Sprinkle over the remaining oreos and strawberries, gently pressing them into the rice krispies.
- Allow to cool and set for 20 minutes before cutting. Enjoy!
Storing strawberry shortcake rice krispie treats
If by chance you have any of these delicious treats leftover, you can store then in an airtight container at room temperature for up to 5 days.
