Who doesn’t love a nice helping of creamy, buttery mashed potatoes to accompany their favorite dish? I look forward to Spring every year, when the perennial herbs start growing back and I can begin incorporating them into our meals.

Chives are one of my favorite herbs to have growing in the garden because they add a punch of flavor to dishes. Mixed with sour cream, they make the best flavored mashed potatoes.

What Kind of Potatoes Should You Use?

Use your favorite potato for mashed potatoes. I will literally use any potato I have on hand. Russets, yukon gold and red potatoes equally make great mashed potatoes. You can even use leftover baked potatoes for mashed potatoes!



How to Make Sour Cream and Chive Mashed Potatoes

Cut the potatoes into equal pieces. Peeling is totally optional. Cutting is necessary to promote even cooking. You can cut them into small pieces if you are wanting to cook them quickly.

Boil the potatoes in water until tender. You can test the potatoes by piercing them with a fork or knife. If the potato falls off easily, it is done. Drain of the water and place back in the pot. Mash and set aside.

Heat the milk, butter and sour cream together in a small saucepan, whisking to fully combine the ingredients. Heat just until the butter is melted. Do not boil.

Mix the milk mixture with the mashed potatoes. When fully incorporated, add in the salt, pepper and chives, stir until fully combined.

Taste and adjust the seasonings as needed.

How to Prep Mashed Potatoes in Advance

Mashed potatoes are easy to prep in advance. You can prep the potatoes or the entire dish. Here are two different ways to prep your mashed potatoes.

  • Prepping just the potatoes: Peel and cut the potatoes in advance. Place them in cold water, cover and refrigerate for up to one day. When ready, drain off the water and boil until tender.
  • Prepping the entire dish: Make the full recipe, allow to cool then cover and refrigerate for up to 4 days. Whenever you are ready to serve them, allow to sit at room temperature for 20-30 minutes before reheating them. You can place them in a large pot and reheat on low, stirring to prevent burning. Alternatively, you can place a damp paper towel over them and reheat them in the microwave, using 30-45 second intervals, stirring in between intervals.
  • Prepping for same day cooking: Peel and cut the potatoes in advance. Place them in cold water, cover and refrigerate until needed. When ready to finish the recipe, drain off the water and boil the potatoes are instructed. Continue with the recipe.

How to Store Mashed Potatoes

Store leftover mashed potatoes in an airtight container for up to 4 days. Leftover mashed potatoes can also be frozen. Freeze in a freezer bag or airtight container for up to 1 year.

  1. Cut potatoes into medium sized pieces.  Place the potatoes in a large pot and fill with enough water to cover the potatoes. Bring to a boil and cook until the potatoes can be easily pierced with a knife or fork. Drain the potatoes and place back in the pot.  Mash and set aside.

  2. In a small pan add the milk, butter and sour cream, whisking to fully combine the ingredients. Heat just until the butter is melted. Do not boil.

  3. Pour the milk mixture over the mashed potatoes and stir until well combined.  

  4. Season with salt, pepper and chives.  Taste and adjust the seasonings if needed.  Enjoy!

Note

For less of a tangy flavor from the sour cream, omit 1-2 tablespoons of the sour cream and replace it with milk.
