Sautéed Squash

Sautéed squash is one of the easiest ways to cook fresh summer squash. It’s late spring now, almost summer and the summer squash has been producing like crazy out in the garden. So, you can imagine that we have been eating a lot of squash. When it comes to cooking summer squash my favorite way is just a simple sauté. I love being able to sauté up some fresh squash with onions and garlic in just a few minutes for a healthy side dish at dinner time.

This recipe is one of the easiest recipes, and it takes no time at all to prepare. I like to start cooking the squash about ten minutes before the rest of the meal is ready. That’s how fast it cooks. Squash is best when cooked just enough to make it tender. When it is over cooked it becomes mushy and slimy. Those are two things that are not very appealing to me. For this reason, I do not like to preserve squash. When the squash is coming in from the garden we eat as much as we can fresh (before we get tired of it) and give the rest away.

Sautéed Squash is a great side that pairs well with dishes like this Chicken Parmesan, or this Roasted Chicken recipe.

Here are a few different ways I like to change up this recipe. Sometimes I will add fresh zucchini to the pan and sauté it with the squash. Fresh button mushrooms are also great sliced and sautéed with the squash. Squash also pairs well with all types of fresh herbs like Oregano, Thyme and Sage. Fresh lemon zest or juice is great as a finishing tough to brighten the squash up.

How to Sauté Squash

When cutting the squash for this recipe it is important to cut it into equal pieces. This will promote more even cooking.

Rinse and dry the squash and cut it into 1/4″ half-moon slices.

Slice the onion into 1/4″ half-moon slices.

Thinly slice or mince the garlic. Or use garlic powder to taste.

In a large sauté pan over medium high heat, add in the olive oil. When the oil is hot add in the squash and onion. Spread out as much as you can to make a single layer on the bottom of the pan.

Sauté for about 5 minutes then stir, trying to flip each piece over to brown the other side. When the squash is almost ready add in the garlic, salt and pepper. Sauté until the squash is just tender and gives a little when pierced with a fork. Remove from the heat and serve. Enjoy!

Leftover Squash

Leftover squash is fantastic! I love adding it to soups, salads or just reheating it and eating it as it is. When reheating leftover squash, I just warm it up in a pan on the stove. When adding it to another dish, add it at the end so that it doesn’t overcook and become mushy.

This sautéed squash is delicious and super easy to make.  This is the perfect simple side dish to almost any meal that is ready in less than 20 minutes.  Pair it with chicken, pork, beef or seafood.  It is also a great meal prep side.
