This Sautéed Green Beans with Mushrooms recipe is my favorite way to prepare green beans. Green beans don’t always have to be drowned in water and bland. They are actually great vehicles to soak up flavors.

Sautéing allows you to preserve the crisp texture of the beans while infusing them with delicious flavors. Fresh green beans are ideal for this dish, but during the off-season, such as winter, frozen green beans are an excellent substitute.

The technique of sautéing green beans results in a texture that is both crisp and tender. Blanching them first helps retain their vibrant color.

Ingredients for Sautéed Green Beans With Mushrooms

Green Beans – Fresh or frozen green beans can be used in this recipe.

Water – Needed to blanch the green beans to keep them bright green.

Mushrooms – Such as button mushrooms.

Oil – A good olive oil for sautéing.

Butter – Plain unsalted butter for flavor.

GarlicFresh garlic or garlic powder.

Seasonings – Salt and Pepper.

TIPS

  • Blanch the green beans before sautéing to retain their bright green color.
  • Do not overcook them, their color and texture will not be appealing.
  • Leftover green beans are great reheated or added to other dishes like a chicken pot pie or veggie soup.
  • Don’t be afraid to add more oil while the green beans are cooking. If the pan is getting dry, add a drizzle of oil.
  • Thinly slice the garlic versus mincing it to prevent it from burning while sautéing.

HOW TO MAKE SAUTÉED GREEN BEANS WITH MUSHROOMS

This easy, homemade green beans and mushrooms recipe is an ideal side dish for Thanksgiving, Christmas, or any weeknight dinner. Ready in just 25 minutes, it complements a wide variety of main courses.

STEP 1

Blanch the green beans for 2 minutes then cool in ice water. Strain off the water and pat dry with a paper towel.

STEP 2

In a large sauté pan over medium heat add the butter and olive oil.  Add in the mushrooms and sauté until nicely browned.  Add in the green beans and sauté for about 6 minutes.

STEP 3

Next, add in the garlic, season with salt and pepper and continue to sauté until the green beans are tender, approximately 5 minutes.  Enjoy!

  1. In a large pan, add enough water to blanch your green beans, bring to a boil.  Add in the salt. 

    When the water is boiling add in the beans and cook for 2 minutes.  Strain the green beans and cool down with ice water.

  2. Once the green beans are completely cooled, drain the water and pat them dry with a paper towel.

  3. In a large sauté pan over medium heat add the butter and olive oil.  Add in the mushrooms and sauté until nicely browned.  Add in the green beans and sauté for about 6 minutes.

  4. Next, add in the garlic, season with salt and pepper and continue to sauté until the green beans are tender, approximately 5 minutes.  Enjoy!
