Ingredients Needed

  • White Rice
  • Ground Beef
  • Broccoli
  • Garlic Cloves
  • Ginger
  • Onions
  • Mirin
  • Soy Sauce
  • Oyster Sauce
  • Sesame Oil
  • Honey
  • Cornstarch
  • Beef Stock – Can be substituted with water if needed.
  • Salt & Pepper

Customizations

Vegetables such as carrots, zucchini, summer squash, and mushrooms work wonderfully in this dish. It’s also excellent when topped with red pepper flakes or sriracha for a spicy beef and broccoli twist. You can’t go wrong with this simple, yet flavorful dish.

How to Make Quick Beef and Broccoli

1. Cook the rice according to package directions.

2. Bring a medium saucepan to a boil and blanch the broccoli for 2 minutes. Remove from the pot and add to a bowl of ice water to stop the cooking. Strain and set aside.

3. In a large skillet over medium heat begin browning the meat, crumbling it as it cooks. Season with 1/2 teaspoon of salt and 1/3 teaspoon of pepper. Add the onions to the pan and continue cooking until the meat is browned. Add the minced garlic and ginger to the pan and sauté for 1 minute. Remove from the heat and strain off the fat.

4. While the meat is browning mix together the mirin, soy sauce, oyster sauce, sesame oil, honey, beef stock and cornstarch.

5. After the meat has been strained add it back to the pan along with the broccoli. Pour in the sauce and cook, stirring continuously, until the sauce has thickened.

6. Serve over rice and enjoy!

How to Meal Prep Quick Beef and Broccoli

Quick Beef and Broccoli can be prepared five days in advance. Follow the recipe as directed, allow to cool completely before portioning. Keep rice and meat separate.

To re-heat, place a damp paper towel over the top of the meat and rice and heat in the microwave in 30 second intervals.

How to Store Quick Beef and Broccoli

Keep the rice and meat mixture in separate airtight containers for up to five days.
