How to Make Garlic Butter Chicken and Broccoli
1. Thinly slice (horizontally to make 4 pieces) and season the chicken with salt, pepper, garlic powder and dried oregano.
2. In a large skillet over medium-high heat add the olive oil and 2 tablespoons of butter. Once hot add in the chicken breasts and cook for 4-6 minutes on each side, or until cooked through. Remove from the pan and set aside.
3. Turn the heat to medium and add the remaining butter to the pan. Once melted add the garlic and sauté for 30 seconds. Now add in the broccoli, remaining salt and pepper. Stir to combine. Pour in the chicken stock and lemon juice. Cook for 3-4 minutes or until the broccoli is tender.
4. Return the chicken back to the pan, spoon some of the sauce onto the chicken and serve. Garnish with lemon zest is desired. Enjoy!
