Easy Taco Soup Recipe

Easy, stovetop Taco Soup that comes together in just 35 minutes.

When life gets busy, I turn to recipes that are simple to prepare, hearty, and packed with flavor. That’s exactly why this Easy Taco Soup recipe is one of my absolute favorites! It’s my go-to soup when I want something easy to make yet comforting and delicious.

Best of all, it’s perfect for meal prepping because the leftovers taste just as amazing, if not better, the next day.

  • Ground Beef
  • Onion– Red, white or yellow onions can be used.
  • Garlic
  • Rotel– For a milder soup use the original Rotel. If you want a spicy taco soup, you can use mild or hot Rotel.
  • Corn– Canned, frozen or fresh corn.
  • Black Beans– I love using black beans in this taco soup recipe, but you can easily substitute them with kidney beans, chickpeas, or even pinto beans.
  • Stock– For a flavorful soup base I like to use beef stock.
  • Tomato Sauce– The tomato sauce in the soup base really elevates the flavor. I’ve tried making it both with and without the tomato sauce, and I definitely prefer the richer, more robust taste it adds to the soup.
  • Spices/Seasonings– A combination of salt, pepper, cumin, paprika, chili powder, garlic powder, onion powder, dried oregano and chipotle powder is used to flavor the soup.

I love adding toppings to taco soup! Here are a few delicious suggestions to serve alongside or on top of your soup:

  • Tortilla Chips
  • Fritos
  • Avocado
  • Jalapeños
  • Sour Cream
  • Cheese
  • Cilantro

With just a few pantry staples and minimal prep, this soup comes together in no time.

STEP 1

In a large pot over medium heat, brown the ground beef, crumbling it as it cooks. Add the onions and sauté until tender. Drain off any excess grease, then stir in the minced garlic. Cook for an additional 30 seconds until fragrant.

STEP 2

Add the remaining ingredients and seasonings/spices to the pot, stirring well to combine. Bring the mixture to a simmer and let it cook for 20 minutes.

STEP 3

Serve with toppings if desired. Enjoy!

Store leftover taco soup in airtight containers in the refrigerator for up to 5 days. Reheat on the stovetop or in the microwave until heated through.

To freeze, transfer the soup to airtight containers or freezer bags and store for up to 3 months. Thaw it completely before reheating.
