Easy and delicious, these Rosemary Roasted Potatoes are a great fuss free side dish.

The perfect side dish! This easy rosemary roasted potatoes recipe is one that I love making for the holidays. Roasted potatoes are super easy and fuss free to make. Simply toss all of the ingredients together on a sheet pan, or in a skillet, and roast in the oven until done. It doesn’t get much easier than that.

Having an easy side dish that you just pop in the oven gives you more time to focus on the other components of your meal, and I love that about this recipe! Plus, they taste absolutely delicious!

These potatoes go well with all sorts or proteins, like Roasted Chicken or Hamburger Steak. They are also great served alongside a breakfast frittata or omelet. You can also add these to your meal prep menu, because they reheat well and are easy to make in portions.

I like to use red potatoes for roasting because they roast really fast. Plus, I really like the texture of red potatoes when roasted. With that being said, you can use any type of potato for this recipe. Sweet potatoes, russets, and yukon gold potatoes will all work great in this recipe. Just adjust the cooking time as needed for different types of potatoes.

For the best flavor use fresh rosemary, but dried rosemary can be used. Other herbs like thyme, oregano and parsley can also be used. That’s the beauty of cooking from scratch, you can customize any recipe that you are making.

How to Make Rosemary Roasted Potatoes

  1. Preheat an oven to 375°F.  Line a sheetpan with parchment paper.
  2. Cut the potatoes in half or quarter them if they are large potatoes. I like to cut them into 2″ pieces. Just try to keep them equal in size so that they cook evenly.
  3. Place the cut potatoes, all of the seasonings, and oil onto the pan and toss, making sure to coat the potatoes evenly.
  4. Place in the preheated oven and roast for about 45-55 minutes, or until the potatoes are cooked through and crispy on the outside.  If you want, you can turn the potatoes halfway through cooking them. Enjoy!

Want Crispier Potatoes?

Turn the oven up to 425° F and roast for 25 minutes. Flip the potatoes over and roast for another 25-35 minutes.
