Scratch made Chicken Noodle Soup

There is nothing like a warm bowl of Chicken Noodle Soup on a cold Fall/Winter Day. With this recipe you can skip the condensed soup and whip up a hearty soup from scratch. What I love about this recipe is that it really showcases scratch cooking and how easy it can be.

Making soup is a great way to utilize leftovers as well. Leftover vegetables and meats are great for soups. Getting lots of nutritious vegetables packed into one dish and using leftovers is a bonus in my book. You can easily customize this recipe with any vegetables that you have on hand. Turkey is also a great in this recipe.

When making soup, I find that a good quality stock really helps with the flavor. I like to use homemade stock, if you don’t make your own, use what you have.

However, if you do not have any stock on hand, you can always make a quick broth from the chicken in this recipe. Just add some onion, celery, carrots and fresh herbs to your water while cooking your chicken, strain it after it is done and use it in place of the stock. This will help with the flavor of your soup base tremendously. You don’t want to use just water though; it will take away from the flavor. Try this recipe for homemade chicken stock. Even if you don’t have it for this recipe now you can start making some and have if for the next time you need chicken stock.

Chicken Noodle Soup freezes nicely and can be frozen with or without the pasta. When I am making this soup for the freezer, I like to make it without the noodles and just cook the noodles when I serve the soup.

Freezing Chicken Noodle Soup

Freezing in Airtight Containers:

Portion and pour the soup into the containers, leaving 1 inch of space between the top of the container and the soup. Allow the soup to cool completely before placing the lid on. Label the container and freeze for about 6 months. Thaw completely before reheating.

Freezing in Freezer Bags:

Allow the soup to cool completely before filling the bags. Seal and label the bags. Lay them out flat and place in the freezer. Soup can be frozen for about 6 months. Thaw completely before reheating.

Chicken Noodle Soup

Hearty Chicken Noodle Soup.  Packed full of chicken and vegetables, making this soup a great option for dinner or lunch.  It's easily customizable and a great base to freeze for later soups.

  1. Start by boiling your chicken breasts in water.  You can do this step ahead of time so that it is cool when you cut it.

     

    Next add about 2 tablespoons of oil to a large stock pot and add in the onion, celery and carrots.  Saute for about 5 minutes, just to brown them a little.  

  2. Now add all of the chicken stock, water and dry seasonings.  Bring to a boil, then add in the noodles. 

    While the noodles are cooking cut up your chicken.  You can shred it, cut it into small pieces or cut it into larger pieces.  It is up to you.  Once the noodles are done add in the fresh herbs and chicken.  Adjust your seseasoning if needed.
