Soft, chewy and full of warm spices, these Pumpkin Oatmeal Cookies are the perfect fall bake!

The base of this cookie starts with my all-time favorite Oatmeal Cookie recipe, which if you've been around here for a while, you'll probably recognize the recipe. I've added pumpkin purée and all of those cozy spices you typically see in pumpkin spice anything!

If you're anything like me, you can never have too many pumpkin recipes in your back pocket. From pumpkin bars to pumpkin spice cookies and now these oatmeal cookies, I love anything pumpkin. Even my husband, who usually steers clear of pumpkin desserts, couldn't resist these!
Key Ingredients & Variations
- Oats - Old fashioned oats work best in this recipe.
- Pumpkin Purée - Canned pumpkin purée, not pumpkin pie filling. If you are working with homemade pumpkin purée, you may need to squeeze out the excess moisture.
- Spices - I use a combination of cinnamon, cloves, ginger and nutmeg in this pumpkin oatmeal cookie recipe. You can also substitute with your favorite pumpkin spice blend.
- Variations - These cookies are delicious with raisins, chopped pecans, semi-sweet chocolate chips or cream cheese baking chips stirred in.

How To Make Pumpkin Oatmeal Cookies
These cookies come together in just a few simple steps. Let's walk through it!
STEP 1
Start by whisking together all of the dry ingredients in a medium bowl. Set aside.
STEP 2
Now grab your mixer and beat the butter with the granulated sugar and brown sugar until light and fluffy, about 3 minutes. Next add in the eggs, one at a time. Mix well. Then stir in the vanilla and pumpkin purée.
STEP 3
Slowly add the dry ingredients into the butter mixture and mix until everything comes together.
STEP 4
Use a 1-ounce scoop (or 2 rounded tablespoons) to portion the dough onto your prepared baking sheet. Roll each ball in the powdered sugar and place them back on the baking sheet. Gently press them down so they flatten just a little.
STEP 5
Bake for 12-13 minutes then transfer to a cooling rack. Enjoy!

Pumpkin Oatmeal Cookies
Ingredients
- 7 ounces unsalted butter softened
- ½ cup granulated sugar
- ¾ cup light brown sugar packed
- 2 large eggs
- 2 teaspoons vanilla extract
- ¼ cup pumpkin purée
- 2 cups all-purpose flour
- 2 cups old fashioned oats
- ¾ teaspoon salt
- 2 teaspoons cinnamon
- ¼ teaspoon cloves
- ⅛ teaspoon ginger
- ¼ teaspoon nutmeg
- 1 teaspoon baking soda
- ¾ cup powdered sugar
Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a medium bowl combine the flour, oats, spices, salt and baking soda. Whisk until combined.
- In the bowl of a mixer begin beating the butter with the granulated sugar and brown sugar until light and fluffy, about 3 minutes.
- Add in the eggs, one at a time and mix until combined. Now mix in the vanilla and pumpkin purée.
- Slowly add the dry ingredients to the butter mixture and mix just until combined.
- Using a 1-ounce scoop or 2 heaping tablespoons, drop the cookies on the prepared baking sheet. Then roll each cookie in the powdered sugar to coat. Place back on the baking sheet and bake for 12-13 minutes.
- Cool for a few minutes before transferring to a cooling rack. Enjoy!
