Fresh, crunchy, and made completely from scratch with a homemade creamy coleslaw dressing that’s perfectly tangy and not overly sweet. This Coleslaw recipe is a keeper!
¼cupwhite, yellow or purple onionthinly sliced or small diced
½cupmayo
2tablespoonsfresh lemon juice
2teaspoonsapple cider vinegar
1teaspoonsalt
pepperto taste
2 ½teaspoonssugar
I always use Kosher salt in my kitchen! If using table salt, start with half the amount and adjust to taste, as it is much "saltier" by volume.
Instructions
In a small bowl, combine mayonnaise, apple cider vinegar, lemon juice, sugar, salt, and pepper. Whisk until smooth and creamy. Set aside.
In a large bowl, combine the shredded green cabbage, purple cabbage, onions and carrots to the bowl. Toss until the vegetables are evenly combined.
Now pour the dressing over the vegetables and toss until evenly coated. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld together. Give it a quick toss before serving. Enjoy!
