Ingredients
  

  • 5 cups green cabbage thinly sliced or shredded
  • 1 cup purple cabbage thinly sliced or shredded
  • ½ cup carrots thinly sliced or shredded
  • ¼ cup white, yellow or purple onion thinly sliced or small diced
  • ½ cup mayo
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons apple cider vinegar
  • 1 teaspoon salt
  • pepper to taste
  • 2 ½ teaspoons sugar
I always use Kosher salt in my kitchen! If using table salt, start with half the amount and adjust to taste, as it is much "saltier" by volume.

Instructions
 

  • In a small bowl, combine mayonnaise, apple cider vinegar, lemon juice, sugar, salt, and pepper. Whisk until smooth and creamy. Set aside.
  • In a large bowl, combine the shredded green cabbage, purple cabbage, onions and carrots to the bowl. Toss until the vegetables are evenly combined.
  • Now pour the dressing over the vegetables and toss until evenly coated. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld together. Give it a quick toss before serving. Enjoy!
