Ingredients
  

  • 1 cup unsalted butter softened
  • 1 ⅓ cups granulated sugar
  • cup light brown sugar packed
  • 2 large eggs room temperature
  • 1 ½ teaspoons vanilla extract
  • 3 ¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 ½ teaspoons cream of tartar
  • 1 teaspoon cinnamon

Coating

  • cup granulated sugar
  • 1 ½ teaspoons cinnamon
I always use Kosher salt in my kitchen! If using table salt, start with half the amount and adjust to taste, as it is much "saltier" by volume.

Instructions
 

  • Preheat an oven to 350°F and line a baking sheet with parchment paper.
  • In a mixing bowl cream together the butter, 1 ⅓ cups of granulated sugar and the brown sugar until light and fluffy. Add the eggs and vanilla extract and mix until well combined.
  • In a separate bowl whisk together the flour, baking soda, cream of tartar and 1 teaspoon of the cinnamon. Then stir it into the butter mixture.
  • In a small bowl mix together the remaining ⅓ of granulated sugar and the remaining 1 ½ teaspoons of cinnamon.
  • Use a 1-ounce cookie scoop (or 2 heaping tablespoons) to scoop the cookie dough, then roll each piece into a ball and coat it in the cinnamon-sugar mixture. Arrange the balls on a prepared baking sheet, spacing them 2 inches apart. Bake for 12-13 minutes. Enjoy!
