These Strawberry Lemon Cookies are made with fresh lemons and strawberries! If you are a fan of lemon baked goods, you are going to love these cookies. They are soft, chewy and packed full of delicious fresh lemon and strawberry flavor.
I always use Kosher salt in my kitchen! If using table salt, start with half the amount and adjust to taste, as it is much "saltier" by volume.
Instructions
Preheat an oven to 350° F and line 2 baking sheets with parchment paper.
In the bowl of a mixer cream together the butter, sugar and lemon zest until light and fluffy. About 5 minutes.
Now add in the egg, egg yolk, vanilla extract and lemon juice. Mix until fully combined.
In a separate bowl whisk together the flour, baking powder and salt. Now add the flour mixture to the mixing bowl with the butter mixture. Mix just until fully combined.
Fold in roughly ½ cup of the diced strawberries. Reserving the remaining ¼ cup for topping the strawberries. Using a 1-ounce scoop or two heaping tablespoons, portion the dough and place on a lined baking sheet. Press a few pieces of strawberry on the tops of each cookie then roll in the powdered sugar. Place back on the baking sheet.
