Ingredients

Pizza Dough

  • ½ Cup warm water
  • ¾ Teaspoon active dry yeast
  • ¼ Cup warm milk
  • 4 ½ teaspoon olive oil
  • 1 ½ teaspoon honey
  • 1 Teaspoon salt
  • 2 cup bread flour

Spinach Alfredo Sauce

  • 1 Tablespoon olive oil
  • 1 clove garlic minced
  • 1 Cup heavy cream
  • ½ Teaspoon salt
  • 1 ½ teaspoon fresh parsley
  • ½ Cup parmesan cheese shredded
  • 2 tablespoon asiago or romano (grated) optional
  • 1 ½ cup fresh spinach rough chopped
  • 5 Slices bacon, cooked chopped
  • 2 cup mozzarella cheese shredded
I always use Kosher salt in my kitchen! If using table salt, start with half the amount and adjust to taste, as it is much "saltier" by volume.

Instructions

  • In your mixer, mix together the warm water, yeast and warm milk.  Allow to sit for a few minutes so that the yeast has time to bloom.
  • Mix in the honey, salt, olive oil and half of the flour. Using the dough hook on its lowest speed, start to knead the dough. Continue kneading the dough and start adding ½ cup of flour at a time, only using enough flour for the dough to come together. You may or may not need all of the flour.  Or you may need more flour.
  • Once you have added as much flour as it needs, turn the speed up to the next setting and knead the dough for approximately 10 minutes. The dough should be elastic, soft and tacky, not sticky. Remove the dough hook, lightly coat the dough with oil, cover the bowl with a towel and set aside to proof until it doubles in size, 1 ½ to 2 hours.
  • While the dough is proofing make the sauce.  In a small pan over medium heat add the olive oil. Next add in the minced garlic and sauté for 30 seconds. Pour in the heavy cream and bring to a simmer. Stir in the parmesan cheese and continue cooking until thickened to sauce consistency. Stir in the spinach and cook for 1 minute, or until the spinach is wilted. Remove from the heat and set aside until needed.
  • Preheat an oven to 450° F.  On a lightly oiled surface, roll out the dough to your desired shape.  Roll it thin for a thinner pizza or thick for a thick crust.  Place on a lightly greased (or parchment lined) pan.
  • Spread the sauce on the pizza dough and top with shredded mozzarella and the chopped bacon.
  • Place in a 450 ° F oven and bake for 12-15 minutes.  Let rest for 5-10 minutes before slicing.  Enjoy!
