A homemade Spicy Coleslaw made with fresh jalapeños and a creamy dressing. This simple side dish has a zesty kick that pairs perfectly with pulled pork, burgers, or your favorite taco recipes.
I always use Kosher salt in my kitchen! If using table salt, start with half the amount and adjust to taste, as it is much "saltier" by volume.
Instructions
In a large bowl, combine the shredded cabbage, thinly sliced red onions, cilantro and chopped jalapeños.
In a separate bowl mix together the mayo, sugar, apple cider vinegar, lime juice, salt, pepper, and chipotle powder.
Pour the dressing over the cabbage mixture and stir well to combine. Enjoy!
Notes
Test the heat: Add 1 jalapeño first, then add more to your liking.
Lower the spice: If you just want the jalapeno flavor without the heat, you can remove the seeds and membranes before chopping the jalapeños.
Prepping: If prepping in advance wait to dress the coleslaw 30 minutes to 1 hour before serving to keep it from getting watery. If it does, just give it a good stir before serving.
