I always use Kosher salt in my kitchen! If using table salt, start with half the amount and adjust to taste, as it is much "saltier" by volume.
Instructions
Place a large pot (that has a lid) over medium heat. Add the bacon and cook (uncovered) for about 6 minutes or until about half of the fat has rendered off of the bacon.
Add the onion to the pan and sauté until the onions are tender. This should take about 4 minutes.
Begin adding the cabbage, a little at a time, stir to coat in the fat. Add in the olive oil if needed to coat the cabbage. Continue until all of the cabbage has been added. Season with salt, pepper and cayenne.
Stir, scraping the bottom of the pan to release any browned bits. Cook for 5 minutes, then reduce the heat to low, cover, and cook for 30-45 minutes.
Continue stirring often to prevent burning. The cabbage is done when the thicker white parts are tender. Adjust seasonings if needed and enjoy!
Notes
The olive oil may or may not be needed. It depends on the amount of fat that renders off of the bacon. You need enough fat in the pan to coat and fry the cabbage.If the cabbage seems dry while cooking, add in olive oil as needed.
