I always use Kosher salt in my kitchen! If using table salt, start with half the amount and adjust to taste, as it is much "saltier" by volume.
Instructions
Place chopped potatoes in a large pot and cover with cold water. Bring to a boil and cook for 15–20 minutes, or until easily pierced with a fork. Drain completely and return to the warm pot.
In a small saucepan over low heat, whisk together the milk, butter, and sour cream until melted and combined. Do not boil.
Mash the potatoes, then pour the warm milk mixture over top. Stir until smooth and creamy.
Fold in the salt, pepper, and fresh chives. Adjust seasonings to taste and enjoy!
Notes
Flavor Adjustment: For a milder flavor, reduce the sour cream by 1–2 tablespoons and substitute with an equal amount of milk.
