Crispy Parmesan and Garlic Roasted Potatoes are the perfect easy side dish! These flavorful potatoes are golden, crispy, and made from scratch with simple ingredients.
I always use Kosher salt in my kitchen! If using table salt, start with half the amount and adjust to taste, as it is much "saltier" by volume.
Instructions
Preheat an oven to 425 °F and line a baking sheet or baking dish with parchment paper.
In a large bowl, toss the potatoes with melted butter, 1 tablespoon olive oil, minced garlic, salt, pepper, paprika, 1 tablespoon parsley and oregano until evenly coated.
Sprinkle in ¼ cup of the grated parmesan cheese and toss again to coat the potatoes evenly.
Drizzle 2 tablespoons of the olive oil over the parchment paper, sprinkle the remaining parmesan cheese in an even layer.
Spread the potatoes out in a single layer on the prepared baking sheet, cut side down. Roast for 30-35 minutes, without stirring, until the potatoes are golden brown and crispy on the bottoms. Garnish with remaining parsley. Enjoy!
Notes
Red or Yellow Potatoes: Cut into 1-1 ½-inch pieces so that they cook evenly.
Freshly Minced Garlic: For the best garlic flavor. 1 teaspoon of garlic powder can be substituted if needed.
Freshly Grated Parmesan Cheese: This gives the potatoes their crispy crust. Freshly shredded parmesan can be substituted if needed.
