Ingredients
  

  • 1 ½ pounds red potatoes cut into 1-1 ½ inch pieces
  • 3 tablespoons olive oil
  • 2 tablespoons butter melted
  • 3 cloves garlic minced
  • 2 tablespoons fresh parsley chopped
  • ½ teaspoon dried oregano
  • cup grated parmesan cheese
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ½ teaspoon paprika

Instructions
 

  • Preheat an oven to 425 °F and line a baking sheet or baking dish with parchment paper. 
  • In a large bowl, toss the potatoes with melted butter, 1 tablespoon olive oil, minced garlic, salt, pepper, paprika, 1 tablespoon parsley and oregano until evenly coated.
  • Sprinkle in ¼ cup of the grated parmesan cheese and toss again to coat the potatoes evenly.
  • Drizzle 2 tablespoons of the olive oil over the parchment paper, sprinkle the remaining parmesan cheese in an even layer.
  • Spread the potatoes out in a single layer on the prepared baking sheet, cut side down. Roast for 30-35 minutes, without stirring, until the potatoes are golden brown and crispy on the bottoms. Garnish with remaining parsley. Enjoy!

Notes

  • Red or Yellow Potatoes: Cut into 1-1 ½-inch pieces so that they cook evenly.
  • Freshly Minced Garlic: For the best garlic flavor. 1 teaspoon of garlic powder can be substituted if needed.
  • Freshly Grated Parmesan Cheese: This gives the potatoes their crispy crust. Freshly shredded parmesan can be substituted if needed.
