Ingredients

  • ½ cup old fashioned oats
  • ½ cup yogurt any kind
  • ½ cup almond milk or any liquid
  • 2 tablespoons chia seeds
  • 2 tablespoons honey or as needed
I always use Kosher salt in my kitchen! If using table salt, start with half the amount and adjust to taste, as it is much "saltier" by volume.

Instructions

  • Mix all of the ingredients together in a container, cover with a lid and refrigerate overnight. Add any of the flavor combinations below.

Cinnamon Maple Pecan

  • 1 teaspoon vanilla extract
    1 teaspoon cinnamon
    3 tablespoons maple syrup
3 tablespoons toasted and chopped pecans
Mix all of the ingredients in with the oats except for the pecans.  When you go to eat the oats, mix in the pecans.

Chocolate Almond

  • 1 heaping tablespoon almond butter
    2 tablespoons cocoa powder
    3 tablespoons honey
Toasted slices almonds for topping if desired.
Mix in all of the ingredients to the oat mixture.

Raspberry Coconut

  • ¼ cup almond milk, or your liquid of choice
    ½ cup shredded, unsweetened coconut
¼ cup fresh or frozen raspberries
Additional raspberries for topping, if desired
Mix all of the ingredients, except the raspberries, in with the oat mixture.  Add in the raspberries and gently stir.

Chocolate Peanut Butter

  • Increase the milk to 5 ounces (½ cup + 2 tablespoons).  Also increase to honey to 4 tablespoons or to taste.
Add in 3 tablespoons of creamy or crunchy peanut butter.
    2 tablespoons of cocoa powder.
Mix well and refrigerate.  Bananas are a great topping for this overnight oats recipe.
