Ingredients

  • 2 tablespoons olive oil
  • ½ cup onion small diced
  • 3 cloves garlic minced
  • 1 quart tomato sauce
  • 14.5 ounces petite diced tomatoes
  • 1 teaspoon dried basil
  • ½ teaspoon dried oregano
  • ¾ teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon sugar
  • ½ cup pasta water if making with pasta
I always use Kosher salt in my kitchen! If using table salt, start with half the amount and adjust to taste, as it is much "saltier" by volume.

Instructions

  • Preheat a large pan over medium heat, add in the oil.  Once the oil is hot add in the onions and sautée until translucent.  About 6 minutes.
Next add in the garlic and sautée for 30 seconds.
  • Now add in the tomato sauce, diced tomatoes and all of the herbs and spices.  Bring to a simmer and allow to cook for 20 minutes, stirring occasionally.
  • If making this with pasta add in ½ cup of your pasta water, stir well and adjust the seasonings if needed.  Enjoy!
