Gingerbread Cookie Bars

Ingredients
  

  • 5 ounces unsalted butter softened
  • ½ cup dark brown sugar packed
  • ½ cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • cup molasses
  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking soda
  • 1 teaspoon ginger
  • 1 ½ teaspoons cinnamon
  • ¼ teaspoon cloves
  • ¼ teaspoon nutmeg
  • ¼ teaspoon salt
  • 6 ounces cream cheese softened
  • 1 ½ cups powdered sugar
I always use Kosher salt in my kitchen! If using table salt, start with half the amount and adjust to taste, as it is much "saltier" by volume.

Instructions
 

  • Preheat an oven to 350°F and line a 9x13 baking dish with parchment paper. 
  • In a medium bowl whisk together the flour, baking soda, ginger, cinnamon, cloves, nutmeg and salt.  Set aside
  • Cream together 4 ounces (½ cup) softened butter, dark brown sugar and granulated sugar until light and fluffy.  Add in the egg and 1 teaspoon of vanilla extract.  Cream until fully combined.
  • Now add in the molasses and mix until fully incorporated.  Stir in the dry ingredients until just combined.
  • Transfer to the prepared baking dish and press it out into an even layer.  Bake for 18-20 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs attached.
  • After the bars have completely cooled, cream together the cream cheese, 1 ounce (2 tablespoons) of butter, powdered sugar, 1 teaspoon of vanilla, and a pinch of cinnamon. Spread the frosting onto the cooled cookie bars. Enjoy!
