Enjoy the perfect holiday treat with these Gingerbread Cookie Bars topped with cream cheese frosting. Easy to make, rich in flavor, and ideal for festive celebrations!
I always use Kosher salt in my kitchen! If using table salt, start with half the amount and adjust to taste, as it is much "saltier" by volume.
Instructions
Preheat an oven to 350°F and line a 9x13 baking dish with parchment paper.
In a medium bowl whisk together the flour, baking soda, ginger, cinnamon, cloves, nutmeg and salt. Set aside
Cream together 4 ounces (½ cup) softened butter, dark brown sugar and granulated sugar until light and fluffy. Add in the egg and 1 teaspoon of vanilla extract. Cream until fully combined.
Now add in the molasses and mix until fully incorporated. Stir in the dry ingredients until just combined.
Transfer to the prepared baking dish and press it out into an even layer. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs attached.
After the bars have completely cooled, cream together the cream cheese, 1 ounce (2 tablespoons) of butter, powdered sugar, 1 teaspoon of vanilla, and a pinch of cinnamon. Spread the frosting onto the cooled cookie bars. Enjoy!
