Ingredients
  

  • 1 pound ground beef
  • 1 cup onion small diced
  • 3 cloves garlic minced
  • 1 ½ teaspoons salt
  • ½ teaspoon pepper
  • 1 tablespoon cumin
  • 1 teaspoon paprika
  • ½ teaspoon chili powder
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 pinch chipotle powder
  • ½ teaspoon dried oregano
  • 10 ounce can rotel drained
  • 15 ounce can corn drained and rinsed
  • 15 ounce can black beans drained and rinsed
  • 3 ½ cups beef stock
  • 8 ounces tomato sauce
I always use Kosher salt in my kitchen! If using table salt, start with half the amount and adjust to taste, as it is much "saltier" by volume.

Instructions
 

  • In a large pot over medium heat, brown the ground beef, crumbling it as it cooks. Add the onions and sauté until tender. Drain off any excess grease, then stir in the minced garlic. Cook for an additional 30 seconds until fragrant.
  • Add the remaining ingredients and seasonings/spices to the pot, stirring well to combine. Bring the mixture to a simmer and let it cook for 20 minutes.
  • Serve with toppings if desired. Enjoy!
