14ouncesartichokes hearts in waterdrained and chopped
12ouncesfrozen spinachthawed and drained
8ouncescream cheesesoftened
¼cupsour cream
¼cupmayo
½cupmonterey jack cheesefreshly shredded
¼cupparmesan cheesefreshly shredded
½-1teaspoonsalt
½teaspoonpepper
1pinchred pepper flakes
I always use Kosher salt in my kitchen! If using table salt, start with half the amount and adjust to taste, as it is much "saltier" by volume.
Instructions
In a small pan over medium heat sauté the onions. Once tender add in the garlic and sauté 30 more seconds. Remove from heat and add to a large bowl.
Add the remaining ingredients to the bowl, stir until fully combined. Transfer to a 1 ½-quart baking dish, cover and bake for 25-30 minutes or until bubbly. Enjoy!
