Ingredients
  

  • 1 tablespoon olive oil or any neutral tasting oil
  • ½ cup onion small diced
  • 3 cloves garlic minced
  • 14 ounces artichokes hearts in water drained and chopped
  • 12 ounces frozen spinach thawed and drained
  • 8 ounces cream cheese softened
  • ¼ cup sour cream
  • ¼ cup mayo
  • ½ cup monterey jack cheese freshly shredded
  • ¼ cup parmesan cheese freshly shredded
  • ½-1 teaspoon salt
  • ½ teaspoon pepper
  • 1 pinch red pepper flakes
I always use Kosher salt in my kitchen! If using table salt, start with half the amount and adjust to taste, as it is much "saltier" by volume.

Instructions
 

  • In a small pan over medium heat sauté the onions. Once tender add in the garlic and sauté 30 more seconds. Remove from heat and add to a large bowl.
  • Add the remaining ingredients to the bowl, stir until fully combined. Transfer to a 1 ½-quart baking dish, cover and bake for 25-30 minutes or until bubbly. Enjoy!
