2 15-oz cans sweet corn, drained ½ cup green bell pepper diced ¼ cup red bell pepper diced 1 to 2 fresh jalapeños diced (seeded for less heat) 1 bunch green onions sliced ¼ cup fresh cilantro chopped 1 cup mayonnaise 1 cup sour cream 1 cup cheddar cheese shredded ½ cup Monterey Jack cheese shredded 2 tablespoons Taco Seasoning homemade taco seasoning recipe 2 teaspoons smoked paprika 1 teaspoon salt
I always use Kosher salt in my kitchen! If using table salt, start with half the amount and adjust to taste, as it is much "saltier" by volume.
In a large bowl, combine drained corn, green bell pepper, red bell pepper, jalapeños, green onions, and cilantro.
Add mayonnaise, sour cream, taco seasoning, smoked paprika, and salt. Stir until vegetables are evenly coated.
Fold in shredded cheddar and Monterey Jack cheese.
Cover tightly and refrigerate overnight (or for 4-6 hours) before serving cold with tortilla chips, crackers, or corn chips.
