Whip up these Easy Chicken Fajitas for a simple, flavor-packed dinner. A quick homemade marinade and a hot cast iron skillet deliver perfectly tender results every time.
Pat the chicken dry and place in a container/plastic bag. Mix together all of the ingredients for the marinade. Pour over the chicken, toss to coat and set aside to marinate for 20-30 minutes.
Heat a cast iron skillet to medium high heat, drizzle in 2 tablespoons of the olive oil. Remove the chicken from the marinade, letting the excess drip off, place in the skillet and cook, for 3-5 minutes on each side. Remove from the pan and set aside. If temping with a thermometer. the chicken needs to reach 165°F.
Add the remaining oil to the skillet, add in the peppers and onions, a sprinkle of salt if desired, and cook until lightly browned and softened.
While the veggies are cooking, slice the chicken into ½-inch thick strips.
Once the peppers and onions are done add the chicken back to the pan. Toss to combine if desired. Heat through. Serve with warmed tortillas and your favorite fajita toppings. Enjoy!
Notes
You can marinade the chicken longer if needed, just don't marinade longer than two hours or it can change the texture of the chicken.
When marinating longer, refrigerate until the last 30 minutes.
If grilling, grill over high heat until browned on both sides and has reached 165°F internally. Toss the peppers and onions with a little olive oil and salt and place in a skillet over the fire. Cook for 6-10 minutes, stirring often or until softened.
