Easy Beef Stroganoff

Ingredients
  

  • 1 pound ground beef
  • 3 tablespoons olive oil
  • 4 large button mushrooms sliced or quartered
  • 1 medium onion small diced
  • 3 cloves garlic minced
  • 4 ½ cups egg noodles cooked al dente
  • 1 tablespoon butter
  • 3 tablespoons flour
  • 2 ½ cups beef stock
  • cup sour cream plus 2 Tablespoons
  • 1 ¼ cups heavy cream
  • 1 ½ teaspoons salt
  • ½ teaspoon pepper
  • ½ teaspoon ground mustard
  • 1 teaspoon dried parsley
  • As Needed fresh dill
I always use Kosher salt in my kitchen! If using table salt, start with half the amount and adjust to taste, as it is much "saltier" by volume.

Instructions
 

  • Start browning the meat and onions in a large skillet over medium-high heat. Once they are fully cooked, drain the fat and set them aside.
  • In the same skillet, over medium heat, add in 3 tablespoons of olive oil.  Once hot add in the mushrooms and sauté until browned.  Next add in the garlic and sauté for 30 seconds.
  • Next add the 1 tablespoon of butter to the skillet.  Once melted whisk in the flour to make a roux.
  • Now slowly whisk in the beef stock.  Whisk continuously to prevent any clumps from forming.  Once the beef stock has started to thicken add in the sour cream and heavy cream.  Bring to a simmer.  Continue whisking until the sauce comes together.
  • Add the meat and onion mixture back to the pan.  Stir in the remaining seasonings.  Add in the noodles and allow to simmer for 6 minutes.  Adjust the seasonings if needed.
  • When serving garnish with fresh dill if desired.  Enjoy!
