Ingredients
  

  • 6 chicken thighs bone in and skin on
  • 2 tablespoons unsalted butter softened
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon paprika
  • 1 teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ½ teaspoon fresh or dried thyme
  • 1 teaspoon lemon zest
  • As Needed fresh parsley minced

Instructions
 

  • Preheat an oven to 400°F and line a baking sheet with parchment paper.  
  • Pat the chicken dry with paper towels, ensuring that the skin is completely dry.
  • Mix together the softened butter, salt, pepper, paprika, garlic powder, onion powder, thyme and lemon zest.
  • Using a pastry brush, spread the butter mixture all over the chicken thighs.  Place them on the prepared baking sheet and roast for 35-40 minutes.
  • The chicken thighs are done when the internal temperature reads 165°F -185°.  Garnish with fresh parsley if desired.  Enjoy!
