- 6 chicken thighs bone in and skin on
- 2 tablespoons unsalted butter softened
- 1 teaspoon salt
- ½ teaspoon pepper
- ½ teaspoon paprika
- 1 teaspoon garlic powder
- ¼ teaspoon onion powder
- ½ teaspoon fresh or dried thyme
- 1 teaspoon lemon zest
- As Needed fresh parsley minced
Preheat an oven to 400°F and line a baking sheet with parchment paper.
Pat the chicken dry with paper towels, ensuring that the skin is completely dry.
Mix together the softened butter, salt, pepper, paprika, garlic powder, onion powder, thyme and lemon zest.
Using a pastry brush, spread the butter mixture all over the chicken thighs. Place them on the prepared baking sheet and roast for 35-40 minutes.
The chicken thighs are done when the internal temperature reads 165°F -185°. Garnish with fresh parsley if desired. Enjoy!
