Ready in just 30-minutes, this Creamy Garlic Parmesan Chicken Pasta combines tender bites of chicken and al dente pasta in a delicious creamy garlic parmesan sauce that is easy to make. This family friendly dish is one of my favorite 30-minute recipes to make.
2largechicken breasts (about 1 pound)patted dry and cut into bite sized pieces
1teaspoonsalt½ for the chicken ½ for the sauce
½teaspoonpepper
2tablespoonsunsalted butter
4clovesgarlicminced
2tablespoonsall-purpose flour
2cupschicken stock
¾cupheavy cream
½cupparmesan cheesegrated
1teaspoondried oregano
½teaspoondried basil
½-1teaspoonred pepper flakesoptional
8ouncesrotini pasta (measured dry)cooked
I always use Kosher salt in my kitchen! If using table salt, start with half the amount and adjust to taste, as it is much "saltier" by volume.
Instructions
Heat a large skillet over medium-high heat. Pat the chicken dry, season with ½ teaspoon salt and ½ teaspoon pepper. Add the oil to the skillet and brown the chicken until fully cooked. Set aside.
Reduce the heat to medium then add in the butter. Once melted add in the garlic and cook for 30 seconds.
Now whisk in the flour to make the roux. Cook for 30 seconds then slowly whisk in the chicken stock and heavy cream, being sure to scrape the bottom of the pan to remove the fond (brown bits). Bring to a simmer and continue stirring as the sauce thickens.
Stir in the Parmesan, dried oregano, dried basil and red pepper flakes (if using).
Add the cooked pasta and chicken back to the pan, toss everything together. Season with ½ teaspoon salt and pepper if needed. Enjoy!
