Ingredients
  

  • ½ cup unsalted butter melted
  • 1 cup light brown sugar
  • 2 large eggs at room temperature
  • 2 teaspoons vanilla extract
  • ¾ cup all-purpose flour
  • ¼ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup old-fashioned oats
  • ½ cup coconut unsweetened or sweetened
  • ½ cup chocolate chips semi-sweet
  • cup pecans chopped
I always use Kosher salt in my kitchen! If using table salt, start with half the amount and adjust to taste, as it is much "saltier" by volume.

Instructions
 

  • Preheat an oven to 350°F and line an 8x8 baking dish with parchment paper.
  • In a medium bowl whisk together the flour, baking powder and salt.  Stir in the oats, coconut, chocolate chips and chopped pecans.  Set aside.
  • In a separate bowl, combine the melted butter, brown sugar, eggs and vanilla extract.  Mix until fully combined.
  • Gently stir the dry ingredients into the wet ingredients until fully combined.
  • Gently pour the batter into the prepared pan, spreading it out into an even layer.
  • Bake for 30-35 minutes or until a toothpick inserted in the middle comes out clean.  Cool completely before cutting.  Enjoy!

Notes

For large cookie bars cut into 9 equal pieces. For smaller cookie bars cut into 16 equal pieces.
