old-fashioned oats

coconut
unsweetened or sweetened

chocolate chips
semi-sweet

pecans

I always use Kosher salt in my kitchen! If using table salt, start with half the amount and adjust to taste, as it is much "saltier" by volume.
Instructions
Preheat an oven to 350°F and line an 8x8 baking dish with parchment paper.
In a medium bowl whisk together the flour, baking powder and salt. Stir in the oats, coconut, chocolate chips and chopped pecans. Set aside.
In a separate bowl, combine the melted butter, brown sugar, eggs and vanilla extract. Mix until fully combined.
Gently stir the dry ingredients into the wet ingredients until fully combined.
Gently pour the batter into the prepared pan, spreading it out into an even layer.
Bake for 30-35 minutes or until a toothpick inserted in the middle comes out clean. Cool completely before cutting. Enjoy!
Notes
For large cookie bars cut into 9 equal pieces. For smaller cookie bars cut into 16 equal pieces.
